INGREDIENTS
Picadillo

  • 1 tablespoon oil
  • 1 pound hamburger chuck (20% fat)
  • 1 large russet potato, peeled, dig ½-inch pieces
  • ½ medium yellow onion, chopped
  • 1 shallot, finely chopped
  • ¼ cup pine nuts
  • Kosher salt, freshly ground pepper
  • 1 dried pequin chile, chopped, or ½ teaspoon crushed red pepper flakes
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1½ cups low-sodium chicken stock

Salsa and Assembly

  • 4 plum tomatoes
  • ¼ medium purple onion
  • 3 garlic cloves
  • 1 serrano chile
  • 1 jalapeño
  • Kosher salt
  • ½ small shallot, finely chopped
  • 1 cup crème fraîche or soured cream
  • 2 tablespoons chopped chives
  • 2 teaspoons finely grated lemon peel
  • 1 tablespoon fresh juice
  • 1 Hard taco shells, grated cheddar, chopped cherry tomatoes, and cilantro (for serving)


RECIPE PREPARATION
Picadillo

  1. Heat oil during a large skillet over high. Cook beef, ending with a spoon, until browned everywhere but not totally cooked through, 6–8 minutes. Transfer to a medium bowl with a slotted spoon.
  2. Reduce heat to medium and cook potato, onion, shallot, and nuts in same skillet, stirring often, until tender and nuts combat a touch of color, 6–8 minutes; season with salt and pepper. Sprinkle in pequin chile, cumin, onion powder, and garlic powder and cook, stirring, until fragrant, about 1 minute. Add broth and beef along side any accumulated juices. bring back a simmer and cook, stirring and scraping up brown bits, until liquid is evaporated and potato is tender, 12–15 minutes; season with salt and pepper. Transfer to a medium bowl, cover, and let sit until able to serve.


Salsa and Assembly

  1. Heat broiler. Broil whole tomatoes on a broilerproof baking sheet, turning occasionally, until charred everywhere , 15–20 minutes. Pulse with onion, garlic, serrano chile, jalapeño, and vinegar during a kitchen appliance until mostly smooth but still a touch chunky. Transfer salsa to a bowl; season with salt.

Instructions

Chicken

  1. Preheat oven to 450ºF
  2. Coat chicken breasts with olive oil, salt and pepper then transfer to a roasting dish.
  3. Roast for 25-30 minutes or until 165ºF internal temperature. (time will vary depending on thickness of chicken)
  4. Let cool then chop or shred chicken.

Chicken Salad

  1. Combine chopped chicken, chopped celery, mayo, mustard, salt and pepper. Stir until combine.
  2. Add mandarin oranges then gently stir.

Instructions

  1. Preheat oven to 425ºF
  2. Lightly oil bottom of a 2qt roasting dish. Generously salt and pepper chicken then transfer to roasting dish. Bake for 25 minutes. (make sauce during this time)
  3. After the first 25 minutes, spoon sauce over chicken and add lemon wedges to roasting dish. Return to oven and bake 10-15 more minutes or until internal temp reaches just under165ºF.
  4. Spoon juices over chicken and broil on high the last 2-3 minutes to brown.
  5. Remove from oven and serve.

Garlic Butter Steak and Potatoes

When you’re hankering for a classic steak and potatoes dinner, this one-skillet dish fits the bill perfectly. What makes it extra special is the garlicky lemon-parsley butter that’s basted over the steak as it’s seared. You end up with all the flavors of a steakhouse, except from the comfort of your own home.

For this recipe you brown the potatoes, cook the steaks, and make the sauce, in the same skillet, leaving you with minimal cleanup. When browning the potatoes, be patient with them — if they stick to the pan when you try to flip them, leave them alone to cook longer. They’ll easily release from the pan once browned, so don’t try to pry them up or you’ll be left with broken wedges of potatoes. The reward for your patience will be golden-brown, delicious wedges of potatoes with creamy insides.


Although I’m partial to ribeye steaks, you can really use any kind of steak you’d like. Since the steaks are sliced up at the end and served with a rich sauce, you can stretch the meat out to feed a few people if you make a salad or vegetable on the side.



INGREDIENTS

For the potatoes:

  • 3 tablespoons olive oil
  • 1 pound medium Yukon Gold or red potatoes, cut into 3/4-inch wedges
  • 1/2 teaspoon kosher salt
For the steak and garlic butter:
  • 2 (1-inch-thick) rib-eye or New York steaks (about 12 ounces each), or 1 1/2 pounds flank steak, cut into 2 pieces
  • 1 teaspoon kosher salt
  • 4 tablespoons (1/2 stick) unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley leaves
  • 1 teaspoon freshly squeezed lemon juice, plus more as needed


INSTRUCTIONS

  1. Cook the potatoes: Heat the oil in a 12-inch cast iron skillet over medium heat until shimmering. Add the potatoes cut-side down, sprinkle with the salt, and cook undisturbed until golden-brown and the potatoes release easily from the pan, about 10 minutes. Using tongs, flip each wedge to another cut side and cook until browned and the potatoes are tender, 10 to 15 minutes more.
  2. Meanwhile, dry the steaks with paper towels. Season all over with 1 teaspoon salt and set aside. When the potatoes are ready, transfer to a serving platter.
  3. Cook the steaks: Wipe out the skillet with paper towels and return to high heat until the pan starts to smoke just a bit. Carefully place the steaks in the hot pan and cook on the first side until enough of a crust has developed that the steaks no longer stick to the pan, about 1 minute. Flip and cook on the other side for 1 minute. Continue cooking and flipping for a total of 4 minutes.
  4. Carefully add the butter to the pan. Flip the steaks once more. Tilt the pan so the butter pools on one side and add the garlic to the pool. Use a large spoon to baste the butter over the steaks. Flip again and repeat with basting. Continue cooking and begin checking the internal temperature of the steaks at 6 minutes total cook time for your preferred doneness. Medium rare is between 125°F and 130°F. Remove the pan from the heat.
  5. Transfer the steaks to a clean cutting board and let rest for 5 minutes. Meanwhile, stir the parsley and lemon juice into the juices in the pan. Let cool for a few minutes, then taste and season with more salt and lemon juice as needed.
  6. Cut the steaks across the grain into 1/2-inch-thick slices. Place on top of the potatoes and drizzle with the garlic butter pan sauce.

RECIPE NOTES
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

BBQ Chicken Pizza

INGREDIENTS:

BASIC PIZZA DOUGH

  • 2 tsp. (7g ) sachet dried yeast
  • 1 cup (250 ml) lukewarm water
  • 2 2/3 cups (400 g) plain flour, plus extra to dust
  • 2 tsp. salt
  • 3 tbsp. (¼ cup) olive oil

BBQ CHICKEN TOPPING

  • 1 cup (250 ml) barbecue sauce
  • 1 2/3 cups (150 g) Perfect Italiano™ Perfect Pizza cheese
  • Handful of thinly sliced red onion
  • Handful of thinly sliced green capsicum
  • Large handful of shredded barbecue chicken

METHOD:

BASIC PIZZA DOUGH

  1. To make the dough, whisk yeast and water in a heatproof jug. Stand for 5 minutes or until frothy.
  2. Place flour and salt in a large bowl. Make a well in the centre. Pour in the yeast mixture and oil. Using your hands or a spatula, mix the dough until it comes together and is smooth. Turn out onto a lightly floured work surface and knead briefly.
  3. Place dough in a lightly oiled bowl and cover with cling wrap. Set aside in a warm place to rise for 30 minutes to an hour until it doubles in size.
  4. Turn dough out onto a lightly floured surface and knead gently for another 5 minutes or until smooth. Divide dough in half, wrap one half in plastic wrap and freeze for another use. Roll out remaining dough half to create a 30 cm x 20 cm oval. Sprinkle a little flour on the bench before rolling to prevent dough from sticking. Transfer base to a baking paper lined tray.

BBQ CHICKEN TOPPING

  1. Preheat oven to 230°C / 210°C fan-forced.
  2. Spread pizza base with the barbecue sauce. Scatter with a small handful of Perfect Pizza cheese. Top with onion, capsicum and chicken. Scatter over the remaining cheese.
  3. Bake for 20-25 minutes or until cheese is melted and golden and base is crisp.

Mujadara (Lentils and Rice with Caramelized Onions)

It’s a gorgeous dish layered with lentils and rice at rock bottom , followed by caramelized onions (the more, the better), and hopefully a few of creamy or spicy sauces on the side. It’s one among my favorite items to order at Middle Eastern restaurants, and this recipe tastes a bit like it.




Mujadara is served across the center East in various forms and goes by differing names, counting on where you're . it's many spelling variations: mujadarra, mujadarah, majadra, mejadra, moujadara, mudardara, and megadarra.

How to Cook Mujaddara

Store-bought chili-garlic sauce may be a good option, too. If you would like a more mild flavor boost, try a couple of sliced cherry tomatoes.




INGREDIENTS
  • 4 medium cloves garlic, smashed and peeled
  • 2 bay leaves
  • 1 tablespoon ground cumin
  • 1 ¾ teaspoons fine sea salt, divided
  • Freshly ground black pepper
  • 5 cups water
  • 1 cup brown* basmati rice, rinsed and drained
  • 1 cup regular brown or green lentils**, picked over for debris, rinsed and drained
  • ⅓ cup extra-virgin olive oil
  • 2 medium-to-large yellow onions, halved and thinly sliced
  • ½ cup thinly sliced green onions (from 1 bunch), divided
  • ½ cup chopped fresh cilantro or flat-leaf parsley, divided
  • Plain whole-milk or Greek yogurt, for serving
  • Spicy sauce, for serving (optional): shatta or zhoug or store-bought chili-garlic sauce or even sriracha
INSTRUCTIONS

  1. In a large Dutch oven or soup pot, combine the garlic, bay leaves, cumin, 1 ½ teaspoons of the salt and about 20 twists of freshly ground black pepper. Add 5 cups water and bring the mixture to a boil over medium-high heat.
  2. Once boiling, stir in the rice and reduce the heat to medium. Cover and cook, stirring occasionally and adjusting the heat as necessary to maintain a controlled simmer, for 10 minutes.
  3. Stir in the lentils and let the mixture return to a simmer. Cover again, reduce the heat to medium-low, and cook until the liquid is absorbed and the rice and lentils are tender, about 20 to 23 minutes.
  4. Meanwhile, warm the olive oil in a large (12-inch) skillet over medium-high heat. When it’s warm enough that a slice of onion sizzles on contact, add the remaining onions. Stir to combine.
  5. Stir only every 3 minutes or so at first, then more often once the onions at the edges of the pan start browning. If the onions are browning before they have softened, dial down the heat to give them more time. Cook until the onions are deeply caramelized and starting to crisp at the edges, about 20 to 30 minutes. In the meantime, line a large plate or cutting board with a couple paper towels.
  6. Using a slotted spoon or fish spatula, transfer the onions to the lined plate and spread them evenly across. Sprinkle the remaining ¼ teaspoon salt over the onions. They’ll crisp up as they cool.
  7. When the lentils and rice are done cooking, drain off any excess water (if there is any) and return the mixture to the pot, off the heat. Lay a kitchen towel across the top of the pot to absorb steam, then cover the pot and let it rest for 10 minutes.
  8. Remove the lid, discard the bay leaves, and smash the garlic cloves against the side of the pan with a fork. Add about ¾ths of the green onions and cilantro, reserving the rest for garnish. Gently stir and fluff the rice with a fork. Season to taste with additional salt and pepper, if necessary.
  9. Transfer the rice and lentil mixture to a large serving platter or bowl. Top with the caramelized onions and the remaining green onions and cilantro. Serve hot, warm or at room temperature, with yogurt and spicy sauce (optional) on the side.
NOTES

*RICE NOTES: You can find brown basmati rice (Lundberg brand) at most well-stocked grocery stores, in the rice or health food section. You can also find it at Trader Joe’s, but be sure to buy the regular (not quick-cook) variety. To make this recipe with white basmati rice instead, cook the lentils in the boiling water first for about 10 minutes (until somewhat softened on the outside/still firm in the middle), then add the rice and cook until both lentils and rice are tender, about 25 minutes.

**LENTIL NOTES: You want to use standard-issue brown or green lentils, not red or yellow lentils or fancy French green or black beluga lentils. Those all have different cooking times, which won’t work with these instructions.

EASY MUSTARD CHICKEN RECIPE

Quick and straightforward recipes that only involve a couple of ingredients are key to getting dinner on the table during busy weeks. This easy mustard chicken is full of flavor but only needs a couple of kitchen staples to urge from stove to plate.

  • 1/4 cup chicken stock
  • 1/2 teaspoon dried tarragon plus more for garnish
  • 2 Tbsp Dijon mustard
  • 1/2 cup cream


Instructions

  1. Season the chicken with salt and pepper. Heat oil over medium heat during a large skillet. Add chicken and cook until browned. Remove chicken from pan.
  2. Pour 1/4 cup of chicken stock into the pan and convey to a boil, scraping up the bits from the pan. Let simmer for 1-2 minutes or until reduced by half.

Ingredients

For the green plantain empanada dough:

  • 4 green plantains
  • 1 egg – optional, can use some of the cooking water from the plantains instead of the egg
  • 2 tablespoons of butter, room temperature – or oil
  • ~ 1 teaspoon of salt
For the cheese filling:
  • 1 cup of grated or crumbled cheese, can use quesillo, queso fresco, or mozzarella
  • 1/3 cup finely diced white onion or scallions
  • Oil for frying

Instructions

For the green plantain empanada dough:
  1. Wash and peel the green plantains, take care as green plantains tend to stain clothes and cutting boards. It works best to try to to this under running cold water.
  2. Cut three of the plantains in half. Keep the remaining peeled plantain during a bowl of cold water.
  3. Bring water to boil during a large saucepan and add the three plantains. Cook until tender, about 30 minutes. Exact time will vary supported the greenness of the plantains.
  4. Remove from heat and let the cooked plantains sit within the water they cooked in until they're cool enough to handle (but still warm), if you remove them from the warm water they will get too hard.
  5. In the meantime, grate the remaining raw plantain employing a very fine grater.
  6. Place the cooked plantains during a kitchen appliance and pulse until you've got a thick coarse mix. The size of the empanadas is up to you, I usually make them medium or small sized if I’m serving them as appetizers or sides, or large if I’m serving them as a main meal.
  2. The other option for creating the empanada discs, is to shape the dough into small balls – golf size for little ones and tennis size for larger ones. Then flatten these balls of plantain dough employing a tortilla press or something flat, sort of a chopping board . You can also use a rolling pin to roll out each individual ball into a round disc – don’t worry if they aren’t perfectly round. It helps to put the dough balls in between pieces of paper (lightly greased) to stay it from sticking to the board, tortilla press, or kitchen utensil .
For the filling and assembly:
  1. Mix the cheese and the onions together.
  2. Place a spoonful of the cheese and onion filling in the middle on the empanada disc, fold and seal the empanada. You can also do that employing a piece of paper . To seal it correctly press the sides gently together with your fingers. You can also use a fork to assist seal the sides .

INSTRUCTIONS

  1. Prepare the onions, avocado dip, and beans as directed, therein order.

Recipe Notes:
WHY THIS METHOD WORKS - This recipe works consistently whenever because the chicken starts off in boiling water which is 100°C/212°F regardless of which country, what stove, and what pot you're using! Chicken cooks at 65°C/150°F, so while the boiled water is at or above this temperature, the chicken is cooking. Once it falls below this temperature (as the water cools off the stove), the chicken stops cooking and thus prevents the breast from overcooking, yielding a guaranteed perfectly cooked juicy pigeon breast every single time!
1. Chicken breast size and cook times
  • 250g/8.5oz each pigeon breast - leave in water 20 minutes
  • 300g/10oz each breast - remove of fridge half-hour prior, leave in water for 25 to half-hour
  • Larger than 300g/10oz - are you sure they're CHICKEN breasts?? 😂
  • 220g / 7oz or smaller - recipe works fine but isn't quite as juicy, but still juicier than normal simmering method. Can pull out of water earlier employing a thermometer - cooked breast is 66°C / 151°F, check at 16 minutes.
  • Up to 45 minutes, and that i still don't notice any loss of juiciness within the breast
  • Around 1 hour, I notice that it's slightly less juicy - but still way juicier than the standard methods of poaching!

Frozen chicken - must be fully thawed before using.


2. Flavourings are optional, they supply a subtle hint. Good if you propose to eat without adding plenty of extra flavour eg slice and use on sandwiches. be happy to feature more fresh or dried herbs or dried spices.
DO NOT add salt or anything with salt in it (sauce or powders). Will affect boiling point and cooling rate of water = might affect chicken cooking through properly.
3. Pot - large enough so breast lies in single layer. If scaling recipe up, use larger pot. I've done 6 breasts during a large pot.
4. High altitude locations: the upper above water level you're , the lower the boiling point of water. this suggests that if you're located during a high altitude area, the recipe must be amended to boil water with chicken in it before taking it off the stove, to make sure the chicken cooks through. i like to recommend employing a thermometer to see chicken for doneness - start by boiling for 1 minute, begin stove for 20 minutes, check temperature (cooked breast 66°C / 151°F). If undercooked, remove chicken from water, bring copy to boil, put breast back in and begin stove. Check internal temp every jiffy . Then next time you create poached chicken, increase or decrease boiling time before beginning stove!

  2. Meanwhile, prepare the mash consistent with the pack instructions. Mix in half the chives, then put aside to chill .
  3. Melt the butter during a saucepan over a medium heat. Add the garlic and cook for 30 secs. Take the pan the warmth and add the flour, mixing until a thick paste forms.
  4. Pour within the stock, a touch at a time, whisking as you go. Mix within the remaining chives and therefore the nutmeg; season. Cook for 1-2 mins, whisking occasionally.
  5. Add the kale and mixed veg to the sauce. Increase the warmth until bubbling, then reduce to a simmer. Cook, stirring occasionally, for 7-8 mins.

Ingredients

  • 500g new potatoes
  • 3 tbsp vegetable oil
  • 4 wild sockeye salmon fillets (about 130g each), from the fish counter
  • 60g smoked bacon lardons
  • 200g frozen peas
  • 4 spring onions, finely sliced
  • 200ml crème fraîche
  • ½ tsp English mustard
  • 1 tbsp dill, finely chopped, plus extra to garnish
  • 1 tbsp drained capers, roughly chopped
  • ½ lemon, dig wedges, to serve


Method


  1. Preheat the oven to gas 7, 220°C, fan 200°C. Cook the potatoes during a pan of boiling water for 20-25 mins, until tender. Drain and return to the pan. Using the rear of a fork, lightly crush the potatoes.
  2. Meanwhile, rub 1 tbsp of the oil over the salmon fillets, placed on a baking sheet lined with foil and season. Roast within the oven for 8-10 mins, until cooked through.
  3. Heat a non-stick frypan over a high heat. Add the lardons and stir-fry for 4-5 mins, until crisp. Add the potatoes and fry for 1 min to colour. Mix within the peas and cook, stirring occasionally, for 1-2 mins until defrosted and heated through.
  4. Heat the remaining oil during a separate frypan over a medium heat. Add the spring onions and cook, stirring occasionally, for 2-3 mins to melt . Mix within the crème fraîche, mustard, dill and capers, adding a touch of water if the sauce seems a touch thick. Season and convey to the boil then remove from the warmth .
  5. To serve, divide the salmon and potatoes between 4 plates and spoon over the sauce. Garnish with a touch chopped dill and lemon wedges on the side.
