Shrimp Avocado Salad with Quinoa and Grapefruit Dressing is a bright, flavorful and healthy recipe! A simple salad made with boiled shrimp, avocados, tomatoes, quinoa, micro greens and homemade grapefruit vinaigrette.
Ingredients
Grapefruit Vinaigrette
- 1/2 Cup Fresh Grapefruit Juice
- 1/2 Cup Olive Oil
- 2 teaspoons Stone Ground Dijon Mustard
- 1 Tablespoon Honey
- Pinch Salt/Pepper
Salad
- 3 Cups Cooked Tri Color Quinoa, prepare according to package instructions
- 1 Cup Micro Greens
- 10-15 Sugar Plum Tomatoes - halved
- 1 Avocado - peeled, pitted and sliced
- 1 Lb Boiled Shrimp - warm or cold
- Flaked Sea Salt
- Cilantro, optional
Instructions
- Grapefruit Vinaigrette
- Combine all dressing ingredients in a glass jar. Secure jar lid and shake vigorously. Drizzle over salad.
