Move over avocado toast; there’s a replacement breakfast toast in town!
HUMMUS TOAST FTW!
It’s no secret that I could easily eat hummus all day long, but this is often my first raid breakfast hummus-ing it up and I’m seriously loving it!
This nutrient-dense chickpea spread may be a fantastic source of fiber, protein, healthy fats and vitamins, making it a powerhouse topping for your morning toast. It also makes a wonderful healthy snack to assist you power through that 2:00 feeling that always seems to strike mid-day. The topping combinations are endless and you'll basically top it with anything your heart desires!
I went the Tex-Mex route this point around because TACO HUMMUS IS LIFE!
I like to try to to a touch meal prep for the week ahead, including making salsas and sauces to juice up our eats all week long.
In addition to my avocado salsa verde, i really like to form an enormous bowl of pico de Gallo. It’s amazing on pretty much everything! We like to toss it on tacos, fold it into cheesy turtle bean and pepper jack quesadillas, and top it on our breakfast toast, of course.
It’s a match made in heaven and just scripting this post is making me crave a slice!
Let’s get toasty!
Ingredients
- 1 slice whole grain bread
- 2-3 TBSP Sabra Taco Inspired Hummus
- 2-3 TBSP Pico de Gallo or fresh salsa (see below)
- 1 large egg
TASTY TOPPINGS
- chopped green onion
- crushed red pepper flakes
- freshly ground black pepper
- hot sauce
- sea salt
MAKE-AHEAD PICO DE GALLO
- 2 cups diced Roma tomatoes
- 1 cup diced white onion
- 1-2 jalapeños, minced
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- For the pico de gallo, simply combine the ingredients above. Keep in a lidded container within the fridge for topping your morning toast and every one your snacking needs! You may also use your favorite salsa in its place.
- Cook egg via your favorite method. I went with fried sunny side up egg but hard boiled, soft boiled, and scrambled are all tasty options!
- Spread toasted bread with a couple of tablespoons of taco hummus and top it off together with your cooked egg. Lastly, add your pico de Gallo and garnish together with your favorite toppings from the list above. Commence faceplant!
